It’s this legends birthday today.

Fancy he’s had to put up with that grumpy thing all these years.

Here’s your cake.

Fall-y off bit, bottom right (see below)

Victoria Sponge

12oz marg

12oz caster sugar

12oz Self raising flour

6 medium eggs

Cream the marg & caster sugar together until pale & fluffy.

Gradually beat in the eggs, one at a time, mixing well to avoid splitting the mixture (I almost made it, split at the last!)

Sift in the self raising flour and fold in with a wooden spoon. (If the mixture has split you’ll be able to rectify it at this stage.)

Spoon the mixture into two lined & greased Victoria sponge tins.

Bake at 160 degrees (fan oven) for around 25minutes. I needed a little longer as I think my oven temps a bit out. When the cake springs back in the centre or a skewer comes away clean, it’s cooked.

Leave to cool for 10mins then turn out onto a cooking rack (if a bit falls off, like this one did, just eat it)

When completely cool sandwich the two cakes together with Strawberry Jam & top the cake with a sprinkling of caster sugar.

Put on candles, light, sing song, blow out. Eat.
